Hotel in Foz do Iguaçu announces new chef

The Belmond Hotel das Cataratas hosted the renowned Peruvian chef Jean-Paul Barbier to be responsible for the hotel’s new menu in the food and beverage sectors. The changes started at breakfast, which gained a Peruvian touch with Brazilian ingredients.

This is the first time that Barbier came to Brazil to live. The chef was invited to the Master Series in 2017 and in December of the same year he was called to be the chef of the hotel.

Before working at the Hotel das Cataratas, he had other experiences in Brazil, as a chef at an international photographer Mario Testino, held at the Copacabana Palace Hotel.

“It is important to use Brazilian products, products of the region and apply Peruvian techniques. We are starting to change the menu of the restaurant, I can say we will bring something of ceviche and recipes with potatoes, which refer to the cuisine of Peru, “said Barbier.

In the month of April are planned changes in other departments of the hotel, the main restaurant will have the menu refurbished by the chef in the first fortnight of the month. “We started with the changes in the buffet breakfast, now we will go through each sector in food and drinks,” he clarifies.

Born in Lima, Jean created a taste for cooking at the age of 15, when he began cooking at home and putting ideas into practice. He then went to the Le Cordon Bleu school in Peru, where he has been giving his techniques to the most important Peruvian restaurants.
