The winemaking process begins above the ground, but after three months of aging, the wine is placed in earthen jars called amphorae and then goes to the sea. The amphorae are placed in cages and underwater for one or two years.

However, this method leaves the wine more prone to leaks, but the team takes steps to prevent this. In addition to a cork and the clay jug, the bottles have two layers or are wrapped in rubber to maintain the quality of the material.

In this model of aging the sea provides favorable conditions, with stable temperatures. The process also gives the wine what is described as a pine wood aroma.
